Hearty, healthy, rustic belly warming, sausage casserole 🌱😋

A few key words I had in my little “what should I cook this week” were ‘simple, hearty, vegan & healthy’ - I’d say this falls into those categories 😊

👏🏼We used new heckveggie sausages and have given them a mighty veggie sausage rating of 8/10!

To begin, pre heat the oven to 180 (fan) - crank up the heat on the hob and fry the sausages with onion, garlic, paprika and half a can of guiness. After 8-10 minutes put the lot into an oven proof dish with sliced peppers and carrots.
In a jug, mix a veg stock cube with 300ml of water, add tbsp of tomato purée, mixed herbs, tsp garlic powder, salt and pepper and tsp of thickening granules. Add to the pot, mix it all about. Pop in the oven for an hour.

I served mine topped with chopped chilli with broccoli, spinach and peas on the side 💚
