Sweet potato rostis 🍠😋

One large sweet potato makes four rostis. Recipe inspired by pinchofnom - can’t recommend their recipe books enough! 💛

Use a tiny touch of olive oil on the baking tray so the rostis don’t stick.

The other half reviewed these as “Stunning!” and I agree! 

We went for a yoghurt and tamarind topping but you could use plenty others.
