This Pear Tarte Tatin is such a stunning dessert and it’s definitely my favorite way to enjoy pears! #ad

Tarte tatin can be a bit tricky to get right. Caramel is definitely not the easiest thing to make, so it helps (a LOT) to have the right kind of cookware! We start this recipe off with a heavier duty AllClad copper core pan, which allows us to perfectly caramelize the sugar without it burning thanks to even heat distribution. The bigger sized pan also makes it easier to cook the pears before transferring them to a smaller 10” All Clad D5 pan and baking! #AllClad

Here’s how to make this recipe:

Ingredients:

4-5 large pears, fairly firm
¾ cup granulated sugar
¼ cup butter
2 tsp vanilla extract
½ tsp cinnamon
¼ tsp nutmeg
11-inch round of puff pastry

Preheat oven to 400˚F.

Peel the pears, then cut in half and scoop out the seeds. Cut each half in half or thirds and set aside.

Heat a heavy duty pan (we used an AllClad copper core pan) over medium heat. Once heated, pour the sugar into the pan in an even layer. The sugar will slowly start to melt and brown. Once the sugar has started to caramelize around the edges, gently stir the melted sugar to the middle of the pan. Some lumps will form, but keep stirring and heating. Eventually, the sugar should be completely smooth and medium-dark amber.

Remove from heat and add in the butter, whisking until it comes together. Return to medium heat and add in the pear slices. Almost right away, the caramel will start to seize up, but don’t worry - as the pears release moisture, the caramel will soften and come back together into a smooth sauce. Stir in the vanilla, cinnamon and nutmeg.

Cook for about 10 minutes, until the pears are fork tender. Using a spoon, transfer ¾ of the caramel to a smaller 10-inch pan. Bring to a simmer and cook for a few minutes until thickened. Remove from heat, then arrange the pears rounded side down atop the caramel. Pour any remaining caramel over the top of the pears.

Tuck the puff pastry round down the sides of the pan. Bake for 30 minutes, then remove from the oven and let cool for 30-45 minutes before flipping upside down and serving.
