POV: you make sugar free cookies that taste like they’re made with regular sugar 😍🍪#ad | lakanto sugar free monk fruit sweeteners seriously blow my mind every time I use them. Their regular and brown sugars are perfect 1:1 substitutes in our cookie recipes and you genuinely can’t tell that they’re not made with regular sugar. The best part? Lakanto products are all natural. (Did you know monk fruit is a small round fruit in the gourd family?)

Have you tried their products yet?! If not, use our code “ALEXIS15” for 15% off, order online (link in bio) and give these cookies a try. (recipe below) #lakanto #discoveryourchi #partner

RECIPE:

½ cup + 2 tbsp of vegan butter, softened to room temperature
½ cup Lakanto Brown Monk Fruit Sweetener
½ cup Lakanto Classic Monk Fruit Sweetener
2 tbsp flax meal + 5 tbsp water
¾ tsp peppermint extract
½ tsp vanilla extract
1 ⅓ cup all purpose flour (or gluten free 1:1 flour)
¼ cup unsweetened cocoa powder
¼ tsp salt
¼ tsp baking soda
1 cup Lakanto sugar free chocolate chips
8 oz Lakanto melted sugar free chocolate (optional)

Directions:

Preheat oven to 375˚F and line a baking sheet with parchment paper. In a small bowl, stir together flax meal and water. Let sit for 10-15 minutes to thicken.

Cream butter and sugars in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy (1-2 minutes).

In a mixing bowl, whisk together flour, cocoa powder, salt and baking soda.

Add the flax egg, vanilla and peppermint extract to the butter/sugar mixture and beat until combined. Slowly add the flour mixture until just combined. Mix in the chocolate chips.

Use a cookie scoop to portion the dough and place on baking sheet. Use the flat bottom of a measuring cup to gently flatten the cookie dough (they don’t spread much in the oven). Bake for 9-10 minutes for smaller cookies, or up to 12 minutes if you used a larger cookie scoop. Remove from oven and drizzle with melted chocolate. Let set, then enjoy!
