Just finished making some much-needed updates to this corn, avocado & arugula salad with a basil vinaigrette and realized we originally published it exactly 3 years ago to the day, so clearly had to share it with you guys today! 🥑🌽🥬 We slightly modified the recipe (and the photos, which were *yikes*…I’ll share in stories!), but we still love how simple it is. Peppery arugula + sweet corn + creamy avocado + salty, briny olives & artichokes + an herbaceous basil parsley vinaigrette = the perfect summer side dish.
