New on the blog: vegan coq au vin! If you’re not familiar with the recipe, traditional coq au vin is a French braised chicken dish with a rich, flavorful red wine and brandy sauce with bacon, mushrooms and pearl onions. We kept all of that delicious flavor, but subbed the meat for extra mushrooms and French green lentils, which soak up so much of that flavorful red wine sauce! This is SERIOUS vegan comfort food, especially served over mashed potatoes (and/or with crusty bread for soaking up all of that sauce). We LOVE this one and think you will, too!
