It’s #PurpleWeek over on eattherainbow_kids run by our friend Kelly noshandnourish, so we created this super fun (and easy!) purple sweet potato & cauliflower soup! 💜 Yes, the color really is that vibrant IRL...purple sweet potatoes are so gorgeous and packed with nutrients! Recipe: 

2 tbsp olive oil
1 red onion, diced
2 cloves garlic, minced
3 cups peeled & diced purple sweet potato
3 cups diced purple or white cauliflower 
3 cups vegetable broth
1/2 cup unsweetened oat milk 
1 tbsp white wine vinegar
1 tsp fine grain kosher salt
1/4-1/2 tsp ground black pepper

Heat oil in a pot over medium heat. Add onion and sauté for 5-7 minutes. Add garlic and cook additional 2-3 minutes, then add remaining ingredients and bring to a boil. Let simmer for 25-30 minutes, until potatoes are tender. Carefully transfer to a heat safe blender and blend until smooth and creamy. #crowdedkitchen
