Need a quick, flavorful weeknight soup recipe? #FieldRoastPartner Look no further than this easy soup with plant-based FieldRoast Smoked Apple Sage Sausage, potatoes and kale! (Recipe below) I love that these plant-based sausages have SO much bold flavor (and great texture!) but they’re made with real, whole ingredients like grains, spices and vegetables. They’re so versatile for easy, delicious dinner recipes – we like to keep a stock in the fridge at all times! #FieldRoast

Here’s how to make the soup:

Ingredients: 
Serves: 4
Cook time: 30 minutes

2 tbsp olive oil
1 yellow onion, diced
4 cloves garlic, minced
3 plant-based FieldRoast Smoked Apple Sage Sausages, diced
3 cups diced yellow potatoes 
1 tbsp finely chopped fresh sage
¾ tsp salt
¼ tsp red pepper flakes plus more for topping
5 cups vegetable broth
1 cup nondairy cream
4 cups kale, chopped

Heat oil in a large pot over medium heat. Add onion and sauté for 5-7 minutes. Add garlic and sausages and continue cooking 3-4 minutes, until the sausages start to brown. Add potatoes, sage, salt, red pepper flakes, vegetable broth and cream. Bring to a boil, then reduce heat and simmer for 20 minutes, until potatoes are fork tender. Add kale and cook until wilted. Serve with more red pepper flakes.
