#ad / Looking for an easy, delicious vegan dinner that takes less than 20 minutes to make AND works well for meal prep? This Greek pasta salad with chickpeas and mezzetta kalamata olives is the answer! It's delicious served warm or cold, and you can customize with so many different vegetables and add-ins (my favorite add-ins are mezzetta marinated artichokes and/or sundried tomatoes!) Here's how to make it:

16 oz pasta of choice
1 can chickpeas, drained and rinsed
1 cup diced cucumber 
1 cup halved cherry tomatoes
1/2 cup mezzetta kalamata olives
1/2 cup vegan feta
1/4 cup thinly sliced red onion

Dressing:
1/4 cup olive oil
3 tbsp red wine vinegar
Juice from 1/2 of a lemon
1/2 tsp dijon mustard
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper

Cook pasta in salted water according to package directions. Drain and rinse, then add to a mixing bowl with remaining ingredients. Whisk together dressing ingredients, pour over pasta salad and toss well #MezzettaMakesItBetta #Mezzetta
