These Vegan Dan Dan Noodles aren’t 100% traditional, but they def are 100% insanely delicious and pretty pantry friendly! We used finely minced shiitake mushrooms, tofu & walnuts to mimic ground meat, which gets crispy, caramelized and flavored with a spicy, peanutty sauce.
