Who else needs a big bowl of pasta and a glass of SantaMargheritaUS Pinot Grigio tonight? 🙋‍♀️This roasted pumpkin + brussels sprouts + arugula + vegan parmesan pasta is the perfect pair for crisp, refreshing Santa Margherita Pinot Grigio. Perfect seasonal dinner! Here’s how to make it:
Toss cubed pumpkin or squash & quartered brussels sprouts in olive oil and a generous pinch of salt. Roast at 400 F for about 20 minutes, until cooked through and slightly crispy.
Meanwhile, cook pasta of choice. When pasta is finished cooking, drain and coat in olive oil or butter, lemon juice & vegan or regular parmesan cheese. Toss with roasted squash and brussels, fresh arugula, more cheese, toasted pumpkin seeds and a few red pepper flakes.
Enjoy with a glass (or two) of our favorite Santa Margherita Pinot Grigio! More info in IG stories. #ad #SantaMargheritaWines #UncorkExtraordinary #crowdedkitchen
