## Caption

Those Pearl Apples from a few days ago were consumed in the form of this Caramel Apple Galette! Here's the quick recipe. We actually used a kingarthurflour GF pie dough mix w/ vegan butter for the crust in this photo, but you can get our galette crust recipe on our website (oursuperfoodkitchen.com) by searching "galette". For the filling, peel and thinly slice 4 pink pearl apples and toss in 1/4 cup sugar, 1/4 cup melted coconut oil, 1 tsp vanilla extract, a pinch of salt and a squeeze of lemon juice. Coat evenly and pour onto crust. Fold edges of galette, brush with coconut milk, sprinkle with sugar and bake for 45-50 mins at 350 F or until golden brown. Let cool and drizzle with vegan caramel sauce, chopped pecans and don't forget a scoop of ice cream! We highly suggest the kingarthurflour GF pie dough mix...it was perfectly flakey and the best store-bought mix we've tried in years!
