Quickest Tuna Melt

For the Tuna Salad:
2 (5-ounce) cans albacore tuna, drained
3 tablespoons mayonnaise 
2 teaspoons Dijon mustard
2 celery stalks, finely chopped
2 dill pickle spears, finely chopped
Kosher salt and freshly ground black pepper

For the Sandwich:
2 slices cinnamon-swirl bread
1/2 cup tuna salad
2 slices Swiss cheese
1 tablespoon unsalted butter

Make the tuna salad: In a medium bowl, combine the tuna, mayonnaise, Dijon, celery, and pickles. Stir until the tuna is flaked and the ingredients are well incorporated. Taste and adjust the seasoning with salt and pepper. Makes enough tuna salad for about 3 sandwiches. 

Make the sandwich: On 1 slice of the bread, spread the tuna salad in an even layer followed by the Swiss and top with the remaining slice of bread. 

In a medium skillet, melt the butter over medium-low heat. Add the sandwich, then cover and cook until golden, 2 to 3 minutes. Flip, then cover and cook again for another 2 to 3 minutes, until golden on the other side and the cheese has melted. Slice and serve immediately.
