Party till I pie. (Here’s the deal, I loveeeee galettes because I’m typically too lazy for a double crust pie sitch. However, that doesn’t really work with many pre-cooked fillings that are not the *prettiest*. If you caught our last #CookingBaesics, Alex and I made pie dough with Queen emcdowell, so I had a double crust in the fridge from her new cookbook THE BOOK ON PIE. In a supreme act of laziness, instead of an apple pie or individual hand pies, I rolled out the crust as if I was making a galette only to fold it over the filling into a giant sliceable monster that I would liken to a calzone. Cannot emphasize enough how violently this slaps!!)

Apple Pie Calzone

3 pounds Granny Smith apples, peeled, cored and sliced
1 cup granulated sugar, plus more for garnish
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1/2 teaspoon kosher salt
2 tablespoons cornstarch
1 double crust pie dough (this is using emcdowell’s recipe, google it!!!)
1 egg, beaten

1. In a medium pot, combine the apples, sugar, lemon juice, cinnamon, nutmeg, ginger, and salt over medium-high heat. Cook, stirring often, until the apples are tender, 12-15 minutes. In a small bowl, stir the cornstarch with 2 tablespoons cold water until smooth, then pour into the apple mixture. Continue to cook until thickened, 2 minutes more. Remove from the heat and let cool completely. Ideally make this the day before and chill in the fridge.
2. Preheat the oven to 400°F.
3. On a floured work surface, roll out the pie dough into an 18-inch circle. Transfer it to a parchment lined sheet pan, letting half of the dough hang over the edge. Transfer the filling to the half of the dough on the sheet pan, leaving a 1-inch border around the edges.
4. Brush the dough around the filling with egg wash, then fold the other half of the dough over the filling. Crimp the edges with a fork and brush liberally with egg wash. Cut three slits on top and sprinkle with sugar (about 2 tablespoons).
5. Bake for about 30 minutes, until golden brown. Let cool completely, then slice and serve.
