Nood board. (No matter what the question is, garlic butter egg noodles are probably the answer. Fresh pasta is a go to whenever I’m in a creative rut. There’s something about the fact that if you measure the ingredients to the gram and put in the elbow grease, you’ll have a perfect product every time. And sometimes you don’t need a ton of bells and whistles to find fulfillment in a recipe. I always use pastasocialclub’s egg pasta dough ratio of 400g 00 flour, 54g semola flour, and 258g eggs, cooked in a super simple sauce of 4 tablespoons butter, 2 tablespoons olive oil, 4 garlic cloves minced, 2 teaspoons minced thyme, 1/2 teaspoon crushed red pepper, 1 cup starchy pasta water, and 2 cups freshly grated parm.
