Drop Dead Gourdgeous. (Gladly leaning into Fall cooking, which means it’s time to wax poetic about delicata squash, one of my fav gourds. It’s quick cooking, got beautifully tender skin just like me, and is modest in size making it perfect for small batch cooking. While I loveeeeee using it for upside down cakes (that recipe coming soon), today it’s the sweet star of this still very savory pasta with mushrooms, sage, and a splash of balsamic to tie it all together!!)

Delicata Squash & Mushroom Pasta
Kosher salt, to taste
3 tablespoons olive oil
3 tablespoons unsalted butter
1 pound cremini mushrooms, thinly sliced
2 garlic cloves, thinly sliced
1 medium yellow onion, diced
Freshly ground black pepper to taste
2 tablespoons minced fresh sage
2 teaspoons minced fresh thyme
1/4 teaspoon crushed red pepper
2 medium delicata squash (about 2 pounds), quartered, seeded, and thinly sliced (though tbh you could use thinly sliced butternut too)
1 cup chicken or vegetable stock
2 tablespoons balsamic vinegar
1 pound dried gemelli pasta (or any shape you like/have)
1 cup freshly grated parm
1/4 cup chopped fresh parsley

1. Bring a large pot of salted water to a boil.
2. In a Dutch oven, heat the oil and butter over medium-high heat. Add the mushrooms, garlic, and onion, then season with salt and pepper. Cook, stirring often, until golden, 10 to 12 minutes. Stir in the sage, thyme, and crushed red pepper and cook until fragrant, 1 minute.
3. Add the squash, stock, and vinegar, then season with salt and pepper, and cook, covered, until tender, 6 to 8 minutes.
4. Meanwhile, add the pasta to the pot of boiling water and cook until al dente, according the package directions. Drain the pasta, reserving 3/4 of that sweet, sweet starchy pasta water.
5. Transfer the drained pasta and pasta water to the squash mixture and cook for another 1 to 2 minutes to combine. Stir in the parm and parsley, then adjust seasoning with salt and pepper and serve.
