Strawberry & Blueberry Shortcakes
For the Shortcakes:
1 1/2 cups all purpose flour
2 tablespoons purecane
1 tablespoon baking powder
1/2 teaspoon kosher salt
3/4 cup low-fat Greek yogurt
4 tablespoon unsalted butter, coarsest grated
1 teaspoon vanilla extract

For the Berries:
1 cup strawberries, hulled and quartered
1 cup blueberries
2 teaspoons purecane

For the Yogurt:
1/2 cup low-fat Greek yogurt
2 teaspoons purecane
1/4 teaspoon lemon zest
Pinch kosher salt

1. Preheat the oven to 400 degrees F and line a sheet pan with parchment paper.
2. For the shortcakes: In a large bowl, whisk together the flour, purecane, baking powder, and salt. Stir in the yogurt, butter, and vanilla and mix until a dough forms.
3. Scoop into 1/3 cup pucks and arrange on the prepared sheet pan. Bake for about 12 minutes, until golden, then let cool completely.
4. Meanwhile prepare the berries: In a medium bowl, toss the strawberries, blueberries, and purecane. Set aside to macerate for 5 minutes then toss again.
5. Prepare the yogurt: In a small bowl, whisk the yogurt, purecane, lemon zest, and salt until smooth.
6. To assemble, slice open all the shortcakes and fill with yogurt and berries, then serve.
