Brioche French Toast with Blueberry Syrup

For the Blueberry Syrup:
1 1/2 cups blueberries
1/4 cup purecane
1 teaspoon finely grated lemon zest
1/4 teaspoon kosher salt
1 tablespoon cornstarch
For the French Toast:
3 cups whole milk
1/4 cup purecane
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
4 large eggs
1 loaf brioche, cut into 1-inch thick slices
3 tablespoons unsalted butter

1. For the blueberry sauce: In a medium saucepan, combine the blueberries, purecane, lemon zest, salt, and 2 tablespoons water over medium heat. Cook, stirring occasionally, until the blueberries have softened and released their juices, 6 to 8 minutes.
2. In a small bowl, stir together the cornstarch and 1 tablespoon cool water until smooth and then stir into the blueberries. Simmer until thickened, 2 minutes more, then let cool.
3. For the French toast: In a large bowl, whisk together the milk, purecane, cinnamon, vanilla, salt and eggs until smooth. Dip the brioche in the egg mixture and let soak for 10 minutes.
4. In a large nonstick skillet, melt 1 tablespoon of the butter over medium-high heat. Cook 3 slices of the soaked brioche, flipping once, until golden, 1 to 2 minutes per side. Transfer to a platter and repeat until all the French toast is cooked.
5. Spoon the blueberry syrup over the French toast and serve!
