🇺🇲 It's always important to remember that the Sourdough startes, or wild yeast, with or without gluten is a living organism. As with many other naturally fermented foods and beverages, it is impossible to expect exactly the same result with each production, no matter how much you use exactly the same material and use the same process. I wanted to share with you this photo of two starters made with rice flour that I started on the same day, and during the initial feeding process look how they were developing differently. However, both were perfect for use. What you should always keep in mind when starting a new Sourdough starter is if it's accumulating a clear liquid, producing bubbles, it smells "yeasty" and it doesn't have any type of mold on it. Other than that, changes like those in the photo, are not reasons to throw it away and start over, okay? 😉
