Summer Meatballs Pasta Puttanesca
Don’t you agree that easy one pot pasta dinners are the weeknight best solution? I’m taking a favorite classic dish and giving it a twist by adding simeks Simek’s Turkey Meatballs and using fresh summer juicy tomatoes. The whole dish comes together so quickly, and is so delicious that you will go for more. The meatballs cook into the sauce so they can soak all those beautiful flavors and juices that Puttanesca sauce brings. Recipe
Prep time: 5 minutes
Cook time: 20 minutes
Yields: 4 servings
 
Ingredients
24 Simek’s Turkey Meatballs
¼ cup olive oil
3-4 cloves of garlic
¼ tsp red chili flakes
2 anchovy fillets
2 cups cherry tomatoes
1 cup kalamata olives
2 tbsp capers
1/2 cup pecorino cheese grated.
Fresh basil to serve
8 oz spaghetti
1 tbsp salt
 
 
Instructions
-In a medium sauté pan add the oil, garlic, anchovy fillet, and chili flakes. Start with a cold pan.
-Sauté until the garlic is slightly golden and the anchovies have melted.
-Add the tomatoes and let them cook until they start to blister and release the juices.
Add the olives and capers to the pan. Add the meatballs. Cover with a lid and let them simmer for 15-20 minutes in medium heat.
-In the meantime, boil the pasta. Drain the pasta and reserve some pasta water if needed.
-Add the pasta into the sauce and combine gently. Add pasta water if needed. Sprinkle the cheese and cook for another minute.
-Tear some fresh basil over the dish and serve.
-Enjoy!
