Due to an enormous surplus of coffee beans in Brazil Nestlé is asked to think of a way to process the perishable coffee beans. It is very difficult to produce instant coffee, as the volatile coffee aroma is hard to capture. After years of research, Dr Max Morgenthaler succeeded in making a powder that retains the coffee flavours. All you need to do is add hot water to release the coffee aromas and then you have Nescafé!
