The next course on the tasting menu at Le Palais af the @palaisdechinehotel was Ma La Crispy Chicken. Best version of this classic I’ve ever eaten. Chicken was steamed in rice wine and aromatics, cooled and cut, then fried before the wok tossing in chiles and chile oil. The batter included sweet potato flour that was a complete game changer for me texturally and flavor wise. CEC Chen and chef Chan are so talented... @gojourny @ttb_na #journyxtaiwan
