the recipe that has made me craaave eggplant 🍆 Mediterranean inspired roasted eggplant with lots of garlic, burst cherry tomatoes, and fresh basil 

My dad’s side of the family is from Sicily and southern Italy, so we’d make caponata quite a lot- this recipe is inspired by all those delicious flavors! Believe it or not, I used to not be a fan of eggplant. But when it’s made like this…it’s something I could eat breakfast lunch and dinner (and I’m not exaggerating here, I ate all these leftovers for almost every meal the past week 🤩) 

It’s so good served on crusty bread with a creamy smear of vegan cheese!
