Sauce ingredients 
2 tbsp sour cream (or subs with hung curd)
2 tbsp mild salsa (used tostitos chunky salsa or use tomato ketchup, adjust to taste) 
2 tbsp mustard sauce 
2 tbsp lime juice 
1/2 tsp each salt, black pepper, paprika / chilli powder

Salsa Ingredients 
1 1/2 cup dark kidney beans (canned or cooked)
1/2 cup boiled sweet corn 
1/3 cup each finely chopped onion, tomato, cucumber, bell pepper 
1 jalapeño, chopped
Handful of chopped cilantro

Combine ingredients of sauce in a bowl until smooth. You can use hung curd instead of sour cream, 
.
Add remaining ingredients boiled black beans or rajma, veggies of choice - I prep onions bell pepper for crunch - tomatoes for a juicy texture and cucumber for crunchy sweetness, corn is such a must and cilantro for fresh flavors.

Mix to combine well. Refrigerate to serve chilled, it stays fresh in the refrigerator without the dressing falling apart from the salad. So good to prep ahead.
