This post has 2 salads in one 🥳 Save right away & Swipe left for a step by step 😉 And after this salad you cannot say salads are boring, I mean come on don’t you agree with me ? 😈 The trick to get it right is don’t overcook dal to retain texture, to make it as a side salad just skip the lentils & rest as is ☺️ Paneer/tofu/eggs/feta for extra goodness as per preference 😇
.
What’s cooking ? Masoor Dal Salad - Comforting, refreshing, satisfying & so wholesome 🙃 I find salads easy to make cos you have lesser dishes to clean, they’re one pot, chopping & dicing colorful veggies is therapeutic AND diving into a rainbow meal is sheer happiness 🥰 Grab the recipe & ingredients ⬇️
.
.
Ingredients
1 cup Masoor Dal (brown lentils)
3 cups water
1 tsp salt, 2 bay leaves
2 Persian cucumbers diced,
1/2 cup cherry tomatoes + 1/2 large red onion - sliced
1/3 cup tofu cubes
1 jalapeños & handful of cilantro chopped
2 tbsp olive oil
Juice of 1 lime or to taste
1/2 tsp salt & pepper
1 tsp cumin powder

Recipe
🌜Soak Masoor dal in hot water for atleast 1 hour (or for more if time allows) in Instant pot or pressure cooker combine dal, bay leaf, salt, water and pressure cook for 10 mins, natural release pressure. Once pressure is released drain water from Dal (don’t discard since it’s highly nutritious, use later in soups or to knead roti dough) and run under cold water, keep aside.
🌜In a mixing bowl add cucumber, tomatoes, onions, jalapeño or green chilli to taste, tofu cubes, finely chopped cilantro, salt, pepper, cumin powder, olive oil & lime juice. Combine well and it’s ready.
🌜To enjoy it warm don’t rinse pressure cooked Dal under cold water, drain & keep it aside for a few mins -combine with veggies. Store leftovers in an air tight container, lasts good in the refrigerator for 3 days.
