Up your Poha game NOW 🥳 There were times my poha would come out nice & fluffy but at times mushy or dry and POHA is something I’ve been making since years but the results could vary 😰 So sharing today a few tips I learnt from the community + trial & errors + practise, which makes a person perfect right 😀
.
What’s cooking ? Poha (flattened rice) The Aloo Pyaaz Peas version that I love the most & grown up eating 🙃 If you get it right awesome if you don’t here’s what you can try 1. Use thick poha 2. Place poha in a strainer & rinse 3-4 times before you begin cooking, set aside - Let it sit to get rid of any excess water, fluff with a fork 3. After tossing it with onion potato masala if it’s drying out sprinkle a little water & toss 4. Add fried peanuts or place peanuts on a plate & microwave for 2 mins, tossing at half time 5. When reheating poha (for microwave) sprinkle water on top or place a wet tissue. Hope this helps ☺️
.
Ingredients
2 cups thick poha
1 tsp mustard seeds, 1 tsp cumin seeds
2 dry red chillies, 2 green chillies
1/2 cup chopped onions
1/2 cup diced potato
1/4 cup frozen green peas
1 tsp salt, turmeric
1/2 tsp each red chilli powder & black pepper
.
.
🔅Rinse poha, keep aside. Heat oil in a pan- add mustard seeds, let sizzle- add cumin seeds, dry red chillies - let splutter not burnt - add onions, sauté for a min on medium heat. Add potatoes, cook for 2-3 mins until soft & 90% cooked.
🔅 Add all the spices + a sprinkle of water to
combine everything. Add frozen peas, mix - cook masala for a few minutes. Fluff drained poha with a fork (if there’s water in your poha it’ll get mushy) add to masala & gently combine. Refer video. Overcooking will make it dry.
🔅 Finish with lemon juice & peanuts, cilantro.
