This salad is all about a little fruity and a little crunchy, works like a charm for a quick side salad to pair with a meal when you just want something interesting on the side 🧡 All about chopping little elements & tossing together in a dressing and relishing every bite 🥰

What’s cooking? Peach Pepper Salad with Feta and I can’t say enough how big a game changer is feta to make this bowl ☺️ That’s where are the creaminess comes from along with a basic olive oil & lime dressing 🤓 But if you don’t have Feta, then what? Don’t let that stop you from making this salad, go ahead and add shredded or crumbled paneer. The long weekend is almost here and with the temperatures still high make this bowl to bring in a kick to your flavors & taste buds 🙃

Serves 3
Ingredients
1 diced peach
1 red bell pepper
1 cucumber
1/4 cup Feta cheese or paneer
.
Dressing
2 tbsp olive oil
2 tbsp lime juice
Dash of honey to taste
1/2 tsp each salt, pepper
1 tsp dry herbs
.
.
Combine peaches, pepper, cucumber in a bowl - add in cheese & ingredients of dressing. Enjoy ☺️
