You can literally count the number of ingredients on your fingers and minutes on the clock when making this super quick & forever favourite Masala Aloo ❤️ The weather is gloomy and rainy today, I am trying to pick between potato fries for our evening snacking goals or this potato sabzi for lunch 💖 Here’s the recipe for you Incase you’re also thinking what to cook 💙 oh yes pls don’t forget to finish with lots of dry fenugreek and cilantro 💚
.
.
For 2
Ingredients
2 tbsp oil
1 tsp cumin seeds
2 dry red chillies
Pinch of heeng (asafoetida)
1/2 tsp each salt, pepper, coriander powder, red chili powder, amchur powder mixed with 2 tbsp water to make a paste
1 large russet potato - boiled, diced
2 tbsp dry kasoori Methi
Handful of chopped cilantro
.
.
Recipe
Add oil to a pan, once warm add dry red chilies & cumin seeds - let splutter but not burnt - add heeng and stir. On low medium heat slowly add the spice paste + 2 tbsp water to let it all mix well without getting burnt - let it sizzle for a few seconds until it begins to bubble, add boiled and diced potatoes- give it a nice gentle mix until masala is well coated. Crush kasoori Methi between palms and add to potatoes, combine together and finish with cilantro.
