What’s cooking? Orzo Apple Salad 😍 Orzo is a form of pasta, shaped like long grain of rice and is mostly made with wheat & semolina. Pasta + veggies + fruit + nuts + seeds + a quick tangy dressing = a bowl of deliciousness 😍 Makes a hearty meal for a quick lunch or dinner, ready in a few simple steps and sooooo satisfying 🤤 Cold salads specifically cold pasta salads are love and this has been a favourite ever since I made it for the first time 💗

Serves 3 people. I used traderjoes Orzo pasta. Cook orzo as per packet instructions, in a pot bring water to a rapid boil, add 1 tsp salt, add 1 cup orzo and cook for 9-10 mins, sitting occasionally. Add toppings of choice. I added diced Apple, sliced cherry tomatoes, chopped green pepper, cucumber, handful of onion for crunch, peanuts for a nutty texture, hemp seeds for goodness, dill leaves for a rich flavour, you can also add cilantro instead. For dressing combine 2 tbsp honey + 1 tbsp extra virgin olive oil, 1 1/2 tbsp lime juice juice, 1/2 tsp salt, pepper, dry parsley.
