Recipe:
1 cup + 3 tbsp cake flour (128 g)
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
3.5 tbsp butter
3 tbsp veg oil
¾ cup + 2 tbsp Regenerative Organic Certified® Cane Sugar from Wholesome
1 large egg, room temp 
2 tsp vanilla
¼ cup sour cream, room temp
½ cup milk, room temp
2 large, ripe mangoes
 
Whisk dry ingredients. In a separate bowl, beat butter & oil together for 1 minute. Add sugar & beat for 2 minutes on high. Add egg & beat 45 seconds on medium high. Add vanilla & sour cream & mix on medium until just combined.
 Add half the dry ingredients mixing on low, then pour in the milk when a few streaks of flour remain & continue mixing on low. Add remaining dry ingredients when the milk is almost gone. Don’t over mix! Fold any stray bits in with a spatula. Pour into a parchment lined & greased & floured pan, & bake at 350 for 18 to 23 minutes. Let cool in pan 10 minutes, then invert & cool completely. CON’T IN COMMENTS
