There’s nothing quite like the thrill of making an insanely delicious recipe from the random food you have in your fridge. With these Pesto Eggs In Purgatory, we are giving new life to the half full jar of pasta sauce and eggs in your fridge and livening it up with some pesto and herbs. Although I made this with what I had on hand, I will say it is worth the trip to the grocery store if you’re feeling inspired. It’s the perfect quick lunch, but also fun enough to serve for a group brunch as well. I think you’ll be surprised at how much you love this! Ingredients: 1 24 oz jar marinara sauce, I use Rao’s 6 eggs 2 tablespoons pesto, optional 2 tablespoons fresh parsley, chopped Crusty French bread or sourdough to serve (1-2 slices per egg) Freshly grated parmesan cheese to serve Kosher salt and pepper to taste Instructions: In a skillet with a lid, heat the marinara sauce over medium heat. Once warm and bubbling, create 6 divots in the sauce with the back of a spoon and crack the eggs into each divot. Add a pinch of salt and pepper. Cover for 2-3 minutes or until the eggs are cooked to your liking. If you don’t like a runny yolk, cook them for up to 5 minutes. Add small dollops of pesto around the top of the skillet. Sprinkle with fresh parsley and freshly grated parmesan cheese. Serve immediately with crusty bread for dipping. #broccyourbody #brunch #eggrecipe #breakfast #quickrecipes #15minutemeals #fridgecleanout
