Not to be dramatic but it’s so cold in LA right now? I’ll settle for chilly if you want to debate. Bringing back my most famous soup for anyone else who needs to warm up and also start the new year off on a healthy note! This Greek-Style Lemon Chicken Soup truly never gets old. It’s light without leaving me feeling unsatisfied, plus it’s seriously crave worthy. You must make it, or for many of you, make it again! Ingredients: 3 tbsp olive oil, divided 2 small chicken breasts, about 1 lb 2 tsp salt & pepper, divided (+ more to taste) 1 yellow onion diced 2 carrots diced 4 cloves garlic crushed/diced 1 cup uncooked orzo or 2 cups cauliflower rice 2 tbsp fresh dill 2 tbsp fresh parsley 1 tbsp fresh oregano or 1 tsp dried 8 cups chicken broth 3 egg yolks Juice from 2 lemons Instructions: Heat 2 tbsp olive oil in a dutch oven or soup pot with lid over medium heat. Season chicken with 1 tsp salt and pepper. Sear chicken for 1-2 min each side until golden brown, but not cooked through. Set aside. Add another 1 tbsp olive oil and add white onion, garlic and carrots. Season with 1 tsp salt and pepper. Stir for about 5 minutes until the onions begin to brown. Add cauliflower rice or orzo dill, parsley, and oregano. Stir for about 1 minute. Add the chicken broth and chicken back in. Bring to a boil, cover and simmer for 15 minutes. Once the soup is done and the chicken is cooked through, set aside 1 cup of hot broth and slowly add it to your egg yolks (1 tbsp at a time) while whisking vigorously. This prevents the eggs from scrambling when you add it to the soup! Remove the chicken, shred it and add back in with the juice from the lemons and the egg yolk mixture. Add more salt and pepper to taste. Serve with fresh parsley and dill and drizzle with a little olive oil! Note: When reheating, the orzo may soak up the broth. Add more broth as needed and if making ahead consider keeping cooked orzo separate until ready to serve. #broccyourbody #brocctok #easyrecipes #healthyrecipes #souprecipes #souptok
