1️⃣ Season your steak with beef rub of your choice
2️⃣ Smoke at 225 degrees for 35 minutes or until IT registers 120. Remove steak from smoker.
3️⃣ Pre-heat skillet on medium/high with 3 tbsp high heat oil and a stick of butter. Add steak and sear 1-2 minutes per side until crust has formed and steak is at 128 internal.
4️⃣ Remove steaks and let rest 6-10 minutes under basting liquid before slicing.
