Back to my favorite kaiseki sanctuary – Hakubai, and summer just landed on the menu 🍃
Every time I step through that door on 66 Park Ave, it feels like a date with season – the peak of each season’s flavor.

This 9‑course summer lineup? From the very first bite of that egg tofu with green peas, salmon roe, and wasabi, I knew – same impeccable craftsmanship, but now with a bright, breezy summer twist. Perfect with dassai_blue new Yuzu 🍶

🌽 Corn soup with shrimp cake – sweet, silky, and those seasonal veggies add the perfect crunch.
🍣 Assorted sashimi – absolutely upgrade to the uni. That buttery, melt‑in‑your‑mouth richness against the traditional garnishes? Pure bliss.
🥩 Grilled A5 Wagyu – the highlight of the night. The fat just dissolves on your tongue, and the sesame ponzu cuts through with just the right zing. Worth every penny.
🍜 For the main, I went with the matcha soba salad + steamed lobster – the ginger miso dressing is so refreshing, it almost feels like a palate cleanser on its own.
🍈 Dessert? Crown melon, coconut almond mousse, fromage blanc ice cream, kiwi granité, and a mint tuile – it’s like a garden party in every spoonful.

Chef Satou and Pastry Chef mariko__1007 are a dream team – traditional techniques with a modern soul, and every plate is edible art.
