Cook time: 30 minutes
Yields: 3 servings
 
Ingredients
6 fillets 4-6-fillet Gorton’s Beer Battered Fish Fillets
1 red bell pepper
1 orange bell pepper
1 ear corn on the cob cut in small pieces
1 cup broccoli florets
1 zucchini cut lengthwise then quartered
½ red onion sliced
1 cup purple potatoes
2 tbsp avocado oil
Seasoning
1 tbsp salt
1 tsp dry oregano
1 tsp smoked paprika
1 tsp garlic powder1 tsp onion powder
½ tsp black pepper
Dipping sauce
1 cup Greek yogurt
3 tbsp pesto
 
Instructions
Preheat the oven to 4250F degrees.
On a large sheet pan arrange all the vegetables by color starting with reds, orange, yellow, green and purple.
In the middle of the tray leave space for the Beer Battered Fish Fillets
In a small bowl combine all ingredients for the seasoning. Sprinkle over the vegetables.
Spray avocado oil over the vegetables. Transfer the sheet pan into the oven and bake for 25-30 minutes.
In the meantime, make the dipping sauce by mixing the yogurt and pesto in a small bowl. Save it in the refrigerator until ready to serve.
Serve roasted vegetables with crispy fillets and dipping sauce.
