Back-to-school season is officially here & there is no better way to fuel success than with egglandsbest. #sponsored EB eggs have 6x more vitamin D and over double the vitamin b12 compared to ordinary eggs. These muffins will be fueling my 3 kiddos “in-school bellies” (haha-don’t ask). Made with wholesome ingredients they make a delicious breakfast or school time snack! Check out what you’ll need below to bake up a batch yourself!

Oatmeal Muffin Base 
3 cups quick cook or old-fashioned oats 
¾ teaspoon cinnamon 
1 teaspoon baking powder 
½ teaspoon salt 
2 large Eggland’s Best Cage Free Eggs 
1½ cups whole milk 
¼ cup honey 
1 teaspoon vanilla extract 
2 large bananas mashed Add-ins 
½ cup chocolate chips 
½ cup red raspberries 
½ cup apple, chopped + ¼ teaspoon cinnamon

Instructions

1. Preheat oven to 350℉ and grease a 12-count muffin tin with nonstick spray. 2. In a large bowl, whisk together the dry ingredients. 3. Add in the wet ingredients and combine. 4. Divide the batter into 3 bowls and add in desired mix-ins. 5. Fill greased muffin tin wells with batter. Top muffins with additional mix-ins if desired. 6. Bake for 25-30 minutes or until muffins are golden-brown and springy. A tester inserted into the center of the muffin should be clean when removed. 7. Allow muffins to cool before enjoying.
