Apple Cider Whoopie Pies for Fall! 🍎 

These are made with Swerve Sweeteners and are packed with cinnamon spice (Swerve is a zero calorie sweetener that measures cup for cup, just like sugar)

Ingredients-
11/2 cups apple cider
2 cups all purpose flour
2 tsp baking powder
1/4 tsp apple pie spice
2 tsp cinnamon
1/4 tsp salt
1 cup Swerve Brown Sweetener
1/2 cup butter, softened
2 large eggs
2 tsp vanilla extract

TOPPING
1/4 cup melted butter (for brushing)
1/2 cup Swerve Granular Sweetener
1 tsp cinnamon
Cream Cheese Frosting

Place the apple cider into a small saucepan over medium heat and bring to a boil. Remove from the heat once it has reduced to about 3/4 cup and allow to cool.

Preheat the oven to 375F and line a baking sheet with parchment paper. In a large mixing bowl, combine the flour, baking powder, apple pie spice, cinnamon, and salt. Set aside.

In a separate bowl, beat together the Swerve Brown Sweetener and softened butter. Add the eggs, vanilla, and cooled apple cider- beating until smooth.

Gradually fold the dry ingredients into the wet, mixing until just combined.

Scoop tablespoons of batter onto the lined baking tray and place into the oven to bake for 8-10 minutes.

Brush the tops of each cookie in melted butter, then in a small bowl combine the Granular Sweetener and cinnamon.

Dip each cookie into the cinnamon mixture to coat, then pipe a dollop of frosting into the center of half.
Sandwich shut with the remaining cookies.
