A slightly spiced cauliflower soup with green olive salsa verde (castelventrano olives though…because I may be a bit biased)

Salsa verde was one of the first sauces that really showed me cooking isn’t just a rule book of strict measurements and timed-out procedures - it’s more about the ~taste, adjust, season and repeat~ of it all. It’s just one sauce, but it was my gateway sauce.
