Got some leftover Brussels sprouts in the fridge? Try them in a taco! These spicy sprouts get deliciously crispy in the oven and the spicy sauce gives these tacos plenty of heat. 🔥
INGREDIENTS
1 lb Brussels sprouts, trimmed and halved
1 tablespoon olive oil
1 tablespoon chili garlic paste
1 tablespoon soy sauce
1 teaspoon lime juice
6 small corn or flour tortillas
1 small avocado, sliced
¼ cup crumbled queso fresco or feta cheese
Cilantro for garnish

INSTRUCTIONS
Preheat the oven and the baking sheet to 450 degrees.
Coat the Brussels sprouts with olive oil.
Once the oven is preheated, carefully remove the pan from the oven and spread the Brussels sprouts into a single layer. Be careful as the pan will be hot!
Bake for 12 minutes then give the pan a little shake to move the Brussels sprouts around.
Bake for an additional 2-3 minutes until browned.
