One Pot Aubergine Lasagne🍝 A lasagne has never been easier than when it’s all in one pot! This classic winter warmer was created by the lovely cooking.with.abi Recipe (serves 4): 5 fresh lasagne sheets 1 aubergine 70g cheddar cheese 2 x 400g tinned tomatoes Fresh basil 1 red onion 2 garlic cloves 1tsp marmite 1tbsp tomato purée 1tbsp Worcestershire sauce 1/2 ball of Mozzarella Finely dice the onion. Heat a large, ovenproof wok with a drizzle of olive oil and place over a medium heat. Add the onion to the wok and cook for 4-5 minutes or until softened. Add the crushed garlic and cook for 1-2 minutes until fragrant. Cut the top and bottom off of the aubergine and then cut into quarters length ways. Finely slice the aubergine into long strips. Add the aubergine to the pan and cook for 4-5 minutes. Tear a small handful of basil and add it to the pan. Crumble a vegetable stock cube into the pan. Add both tins of tomatoes, the tomato purée and the Worcestershire sauce to the aubergine....
