Creamy Leek & Roast Tomato Mac n Cheese🍅🧀
Credits to cooking.with.abi for whipping up this warming classic using the delicious Arla B.O.B lower fat cheddar and semi-skimmed milk - they really taste as good as full fat!
Recipe (serves 4):
1 leek
200g cherry tomatoes
4tbsp butter
50g plain flour
200g Arla B.O.B cheese
750ml Arla B.O.B milk
1 vegetable stock cube
250g spirali pasta
1tsp English mustard
1tbsp olive oil
50g panko breadcrumbs
Pre-heat your oven to 180 degrees (fan).
Melt the butter in a large saucepan on a medium heat.
Slice the leek into thin rounds and add to the melted butter.
Cook for 3-4 minutes until softened.
Season with salt and pepper.
Add the flour to the leeks and cook for 2 minutes and stir until well coated.
Boil the pasta until cooked but still with a slight bite.
Gradually whisk the milk into the leek roux mixture until well combined.
Grate the Arla B.O.B cheddar cheese and whisk into the sauce.
Crumble in the stock cube and add the mustard. Stir well.
