INGREDIENTS
½ cup Lundberg Organic Antique White Quinoa
1 cup water
1 cup oats
2 cups oat milk
1 cup strawberries, diced
¼ cane sugar
2 tsp. cinnamon
Cheesecake Frosting:
½ cup Greek yogurt
½ cup cream cheese, softened
¼ cup powdered sugar
Strawberries, for garnish
INSTRUCTIONS
1. In a fine mesh sieve, thoroughly rinse quinoa under cold water until the water runs clear. Add quinoa to a medium saucepan with water and bring to a boil. Cover with a tight-fitting lid, reduce heat to maintain a low simmer, and cook for 15 minutes. Remove from heat (keep covered) and steam for 5 minutes. Fluff with fork and set aside to cool.
2. In a stand mixer with the whisk attachment, whisk Greek yogurt, cream cheese, and powdered sugar
