This green rice gets its bright color AND flavor from a blend of oven roasted jalapeños, tomatillos, garlic, and onion. Literally. Toss them in a blender and pour the purée into your pot of rice before cooking. Go ahead, give it a whirl! 😉
INGREDIENTS
2 cups Lundberg Organic Long Grain White Rice
2 cups vegetable broth, low sodium
2 cups tomatillos, quartered
1 cup cilantro, finely diced
1 cup white onion, large diced
1 cup jalapeños, halved
½ cup garlic, cloves, whole (about 12-13)
2 Tbsp. avocado oil
1 Tbsp. lime zest
Sea salt, to taste
Cilantro, for garnish
Lime, for garnish
INSTRUCTIONS
1. Set oven to 400 degrees. Add tomatillos, onion, garlic, jalapeños, and oil to a baking sheet. Add sea salt to taste. Bake for 25 minutes. Add to a blender, purée, and set aside.
