This green rice gets its bright color AND flavor from a blend of oven roasted jalapeños, tomatillos, garlic, and onion. Literally. Toss them in a blender and pour the purée into your pot of rice before cooking. Go ahead, give it a whirl! 😉 ⁠ ⁠ INGREDIENTS ⁠ 2 cups Lundberg Organic Long Grain White Rice ⁠ 2 cups vegetable broth, low sodium ⁠ 2 cups tomatillos, quartered ⁠ 1 cup cilantro, finely diced ⁠ 1 cup white onion, large diced ⁠ 1 cup jalapeños, halved ⁠ ½ cup garlic, cloves, whole (about 12-13) ⁠ 2 Tbsp. avocado oil ⁠ 1 Tbsp. lime zest ⁠ Sea salt, to taste ⁠ Cilantro, for garnish ⁠ Lime, for garnish ⁠ ⁠ INSTRUCTIONS ⁠ 1. Set oven to 400 degrees. Add tomatillos, onion, garlic, jalapeños, and oil to a baking sheet. Add sea salt to taste. Bake for 25 minutes. Add to a blender, purée, and set aside. ⁠ ⁠ 2.
