You HAVE to try this high protein pasta sauce! You guys, it’s so smooth and creamy, you would NOT know there is cottage cheese in it! I used high protein chickpea pasta so this meatless meal was packed with protein! 💪

Here’s what you need:
8oz pasta (I used chickpea pasta)
1 tablespoon olive oil
5 cloves garlic, minced
1 (15oz) can fire-roasted diced tomatoes
2 tablespoons lemon juice (either one works great!)
1/2 cup cottage cheese (4% milk fat works best)
1/2 cup pasta water

Cook the pasta according to package directions and reserve one cup of pasta water.
In a large saucepan, add the olive oil and garlic and sauté over medium-low heat for 3 minutes.
Add the tomatoes, and vodka or lemon juice. Simmer over medium-high heat for 10-12 minutes or until the tomatoes have thickened.
In a blender, add cooked tomatoes, cottage cheese, and 1/2 cup pasta water, and blend until smooth. Add an additional splash of pasta water, if needed.
Combine the pasta with the sauce and enjoy!
