I love that this pasta is loaded with hearty veggies, the pasta absorbs a ton of extra flavor from the sauce and it’s ready in 30 minutes.
I feel like there are two types of people: those who don’t mind dishes and those who loathe them...I fall somewhat in the latter category which is why I love cooking pasta and sauce together in one pot (fewer dishes 🙌!).
But this method has its pitfalls… pasta can turn out mushy and break apart. Here are some of my tips:
1. Use short pasta like cavatappi, penne or rigatoni. Long noodles can break apart.
2. Get the sauce simmering before adding pasta.
3. Stir occasionally to prevent sticking.
4. Add tender veggies toward the end to prevent overcooking.
5. Serve immediately or remove from heat as soon as pasta is al dente so the leftover pasta doesn’t turn mushy.
