Citarella owner Joe Gurrera and his wife stumbled upon a nice little restaurant in Palermo and discovered Sicilian-Style Clams over mashed potatoes. The lemon and capers mixed into the potatoes is especially fresh and makes this recipe a definite keeper!
Serves 4
Ingredients:
2 dozen raw littleneck clams
6 tablespoons extra virgin olive oil, divided
12 green beans, trimmed, cut into 1-inch pieces
Sea salt and freshly ground pepper to taste
6 garlic cloves, finely chopped
1/2 cup dry white wine
Citarella chunky mashed potatoes
1 tablespoon drained Citarella capers
2 tablespoons freshly squeezed lemon juice (from about 1 small lemon)
