If you ever need a “mostly canned goods” dinner idea, SAVE this post! The secret to the spicy, smoky flavor of this soup comes from the canned chipotle chilis in adobo sauce. The other main ingredients are also canned goods, so this is a perfect pantry meal! (If you don’t have a poblano pepper on hand, you can skip it!) Give this one a try- I think you’ll love it!

Here’s the recipe:
1 tablespoon olive oil
1 onion, chopped fine
1 poblano pepper, seeded and chopped
2 garlic cloves, minced
2 tablespoons minced canned chipotle chile in adobo sauce
2 14oz cans fire roasted diced tomatoes
1 (15oz) can black beans, drained and rinsed
4 cups vegetable broth
2 (15oz) cans sweet corn, drained (or one 10z bag frozen corn)
1/4 cup chopped cilantro
Optional toppings: avocado, tortilla chips, hot sauce, etc.
