Ingredients:
3/4 cup Wegmans Organic Unsweetened Coconut Milk
1 Tbsp Maesri Red Curry Paste
1/2 tsp salt
2 (about 1 lb total) zucchini (green squash), trimmed, halved lengthwise & sliced in 1/4-inch half moons
1 pkg (8 oz) Wegmans Mini Sweet Pepper Rings
1 container (8 oz) Wegmans Organic Sliced White Mushrooms, washed
1/2 lime
Directions:
Preheat oven to 400 degrees. Add coconut milk, red curry paste, and salt to small bowl; whisk to combine. Add zucchini, mushrooms, and peppers to 9x13-inch baking dish.
