Fills a tart tin approximately 28cm diameter
Ingredients:
A glug of olive oil
4-5 medium brown onions, sliced
Tablespoon Dijon or English mustard
5 medium eggs
Around 200ml arlacravendale whole milk
Small bunch parsley, roughly chopped
Two big handfuls rocket
Around 200g Arla B.O.B cheddar cheese, grated
300g shortcrust pastry
Start by caramelising your onions. Heat the olive oil in a large frying pan over a medium heat. Add your onions and a large pinch of salt then leave to caramelise over a medium, low heat, stirring occasionally. This takes a while so be patient and don’t be tempted to turn the heat up. It usually takes around 45 minutes.
Roll out your pastry to a rough circle around 5 cm larger than your tart tin and line the tin with the pastry, leaving some overhang. Blind bake...
