Sunday Night dinner with the Family. Chicken Cutlets with Pasta Aglio e Olio. We have made this a few times and now part of the rotation. Make it your own. Recipe below -2 Chicken Breast, cut into 4 Cutlets -2 Eggs -1 Cup Italian Bread Crumbs, add S&P -Olive Oil, guessing 1/2 C -16oz Linguini or pasta of choice -2-3 T Butter -2-3 Cloves Garlic, minced -1/2 Shallot, finely diced -1 tsp Red Pepper Flakes -Fresh Parsley, chopped -Drizzle of Olive Oil -Parmesan, as much as you like **Cast Iron, Med Heat, add Olive Oil **Dredge cutlets in Egg Wash then Bread Crumbs **Approx 3 Min per side, get to 160 degrees internal and watch the color so you do not burn **Rest on rack **Good to time to drop pasta into to salty boiling water **Large Skillet, Med Heat, add butter for few min **Add Shallot and Garlic, let is go a few min **Add Red Pepper Flakes **Add Pasta to skillet **Add 1 T fresh Parsley **Add a lil pasta water and Parm to pasta **Plate and add more Parm and Parsley over Pasta and Cutl...
